We use whole milk curd set in a mud pot and not cream, to prepare pure A2 desi ghee, and butter is separated from the curdled milk using a bilona, and this butter is heated to prepare nutritious Desi A2 Cow Ghee. The cooking is slower and wood-fired in a brass vessel. A slower flame retains most of the nutrients in pure A2 desi ghee in contrast to higher temperatures.
