Melting Point Test for Ghee

How to Perform the Melting Point Test for Ghee

This test helps determine the purity of ghee by observing its melting behavior. Pure ghee tends to melt uniformly, while adulterated ghee may melt unevenly or leave residues.

Materials:

  • Glass bowl
  • Saucepan
  • Water

Instructions:

  1. Fill the saucepan with water and bring it to a simmer.
  2. Place the ghee in the glass bowl.
  3. Place the glass bowl with ghee in the saucepan (creating a double boiler).
  4. Observe the melting process carefully.

Expected Results:

  • Pure Ghee: The ghee should melt uniformly and completely, without leaving any residues or solid particles.
  • Adulterated Ghee: The ghee may melt unevenly, leaving residues or solid particles at the bottom of the bowl.

Limitations:

This test is not definitive and can be influenced by the ghee’s temperature history. Ghee that has been repeatedly melted and solidified may not melt as uniformly, even if it is pure.

Caveats:

Ensure that the glass bowl is clean and dry before starting the test to avoid any contamination.
