How to Perform the Sugar Test for Ghee

This test helps determine the purity of ghee by observing the color change when heated with sugar. The presence of vegetable oil or starch can cause a reddish-brown color change.

Materials:

  • Test tube or small bowl
  • Sugar
  • Ghee
  • Heat source (stove or lighter)

Instructions:

  1. Take 1 teaspoon of ghee in a test tube or small bowl.
  2. Add 1 teaspoon of sugar to the ghee.
  3. Heat the mixture gently.
  4. Observe the color change.

Expected Results:

  • Pure Ghee: The ghee will melt and the sugar will caramelize without significant color change.
  • Adulterated Ghee: The mixture will turn reddish-brown or dark brown, indicating the presence of vegetable oil or starch.

Limitations:

This test is not definitive and can be affected by the quality of sugar.
